我小時候住在台北市城中區，武昌街城隍廟附近有很多小規模的餐廳，市場內有各式特色食品的販售店鋪，新東陽是那時候最主要的名店之一，這是民國40年代的事情了。那時我約莫十來歲，經常看著廟邊的一家汕頭沙茶店，看見師傅鍋鏟起落烹煮菜餚，更是目不轉睛地看著他們手作魚漿，拳頭用力打著木桶內的魚漿許久，使魚漿打到能做出浮水的魚丸。我們的家庭聚會常在此吃著沙茶麵、大啖沙茶炒牛肉，讓我對汕頭菜有深刻的印象（汕頭市為古時廣東潮州府一個重要的城埠）。

童年時的美味

更早些年，我在上海讀小學，祖母家住廈門鼓浪嶼。暑假時，我們都要回去度假小住，同時參加祖母的壽宴。祖母老家附近有個碼頭是供人搭船到廈門，岸邊有家汕頭沙茶快炒店，比我年長的堂兄姐們常帶我來光顧、大快朵頤一番。

後來我們舉家定居台北，我又開始在紅樓的元香吃沙茶火鍋，主要配料也是沙茶味，後來元香火鍋開了不同的分店，至今仍是我最喜歡的餐廳之一。

我25歲服役退伍後，可以自由進出國門，那時我經常去曼谷，接觸到以潮州人為主的華人世界，我們在曼谷有一個潮州籍的家族世交，是經營油脂及洗劑香皂事業，第二代的長公子年齡和我相仿，他從澳洲留學回來在家族企業內工作，過去他曾任職於澳洲的聯合利華香皂廠。我在曼谷一來遊玩體驗，二來更藉此請教他做食用油脂及香皂的學問。最令我感興趣的，在曼谷我時有出入公交私誼的聚會，宴席多是潮州菜，我也經驗到品嘗潮州菜的特色，自此開始接觸「華人的潮州世界」窺探究竟。

往後數十年，我屢屢公出私遊曼谷，也頻繁地接待曼谷的世交好友到台北商談聚會。因此搜尋潮州館大飽口福，也是必有的行程安排。源此興趣，我常好奇查閱文史資料，認識潮州的社會環境歷史人文，知曉「潮州」古屬閩越之地，疆域腹地大，東到泉州，唐朝時割捨部分屬地，設置了漳州，古諺云「地有閩粵之分、俗無漳潮之異」，反應在飲食文化上，就是潮州菜普遍10道主菜中總有3至4道湯菜，這與閩菜偏好湯湯水水一樣，湯菜依序穿插在上菜的流程中，又如：料理的調味是喜愛甜甜鹹鹹互摻，尤善烹飪海鮮、崇尚清淡，這都是潮州菜與閩南菜相似之處。

潮州話及潮州人的飲食習慣與閩南相近，而我本身是閩南人，習慣於閩南菜，經年累月下，我除了對台灣總舖師的辦桌有迷戀之情外，連帶的對潮州菜也十分嚮往。

1990年南僑在曼谷投資速食麵及米菓事業，我常參與以潮州華僑為主的華僑總會活動，並受聘擔任總會的顧問，經常在潮州人的生活圈裡活動，有時參加泰華出國的訪問團，和各地潮州人熱絡打成一片，連帶讓我對海外各地潮州人的發展密切關心。

除了在泰國吃潮州菜外，我商務出差到香港，必定要找尋香港的潮州菜。我喜愛品嘗美食不管是潮州菜、廣東菜，還是江浙菜、四川菜、閔菜等等，無論是巷弄小店、還是宴席大菜的料理，我都能細微分辨出各菜系的絕妙，尤其在混合著潮州菜與廣東菜的餐廳中，我還是能指出何為潮州菜，何者為廣東菜，這也是我體驗美食樂趣所在。這些主題菜系隨著時代環境的改變，各有見長，也各自有很大的變化。

再現潮州珍饌

20年前，我開始接觸台灣的潮州菜，有記憶的是位於民權東路上東王漢宮大樓內的「金島潮州酒樓」，當時「金島潮州酒樓」是台北市數一數二的頂級餐廳，也是政商名流宴客餐敘之首選。後來「金島潮州酒樓」因為消防安全惹議，而結束營業，潮州菜也就從主流的大菜系中逐漸消沉，不再引領風騷。但是台北有很多食客，和我一樣的對於當年「金島潮州酒樓」的風采魅力，念念不忘。鮮甜爽口、味美香濃，說著這舌尖上的味道都出來了。

2010年某天，我在內湖一家健身中心的餐廳裡，遇到了多年不見的老友，就是鼎鼎大名的潮州菜師傅，大家慣呼他「黑仔師傅」（本名袁偉洪）。我與黑仔師傅敘舊，回憶起20年前（1987年）「金島潮州酒樓」風華絕倫，風靡台北饕客的時光。

後來我們再有機會深談，黑仔師傅細說他的人生轉變，談起累積多年的潮州菜經驗，希望能有自己的事業規劃、長久經營打拚的目標。他也希望在台北重拾往日「金島潮州酒樓」的風采，認為潮州菜就此沒落十分可惜。

我也與黑仔師傅分享我開設餐廳的經驗，南僑在上海開設寶萊納花園啤酒餐廳，並陸續經營日式料理、鐵板燒及頂級的西餐廳、麵包坊等等，目前上海已有11家主題餐廳；在台灣，我68歲那年開始經營江浙菜點水樓，如今在台北桃園共有五家，及上海一家。經營餐飲的樂趣與甘苦歷程，說來我也不乏經驗了，但唯獨對潮州菜、經營潮州餐廳的念頭，始終惦記在我心裡不能忘懷。

所以，後來我終於開了「潮江燕」餐廳。
